  12. Leave it to rise until the highest part of the dough is at the height of the sides of the pan. Start preheating the oven to 200°C at the right time.
  13. Lower the oven temperature to 180°C and bake for 15 minutes. Lower the temperature again to 160°C and bake for another 15 minutes.
  14. When the bread is baked, drop it pan and all from about a 15 cm height onto your countertop to push out the hot air. Take the loaf out of the pan to cool, and it's done.
  15. This is how the bread looks when sliced. The crumb is finely textured, moist and soft. And a bit chewy too. It's such a pretty orange color.
